About Roberto Vázquez
Ham carver and ambassador of Ibérico.
I am Roberto Vázquez, a ham carver and a defender of real Ibérico. I have spent years refining the cut, the choice of pieces and everything that happens around the product.
I started carving at family celebrations and ended up making the craft my profession. Today I work with cellars and drying rooms I trust, I choose piece by piece, and I build baskets that are given at home and in companies.
My aim is simple: that Iberian ham is treated with the respect it deserves. Traceability, real quality and a close relationship with each client, without middlemen watering the product down.
Selection
Each piece is chosen by hand. If it does not convince me, it does not go in a basket.
The cut
The right slice changes the flavour. That is why it is cut with a knife.
